Nice Cream – 4 nice ‘n’ easy flavors

If you’re already following a plant-based diet, the term “Nice Cream” should be well-known to you. If not, well maybe this is the first time you’re hearing about it. Nice Cream is simply, non-dairy ice cream that’s nicer for you and nicer for the cows – it’s just plain nice! Actually, it’s not plain at all – it’s as tasty and flavorful as you want to make it. Once you learn how to make the super nice ‘n’ easy base, I’m sure you’ll be blending up all kinds of crazy concoctions of your own!

First you need a couple bunches of organic bananas Yes, specifically organic. They really aren’t that much more expensive, they’re the main ingredient, and they are soooooo much nicer and better! (Nice bananas = Nice cream) Peel them, cut them into chunks or thick slices and put them in one or more freezer bags. If you are going to make several flavors like I did, it’s great to weigh them first and then put them into different bags. Then, simply freeze them for 6-8 hours, or overnight, or in the morning before you head off to school or work!

For my flavors, I only needed to do a very little bit of prepping with a couple other ingredients. I bought organic, pre-shelled pistachios (2 oz of organic, seed-only pistachios was the same price as 12 non-organic with shells on – it was a no-brainer) and ground the seeds into a fine powder using a hand mixer attachment. For the choco-coffee flavor, I played it safe and dissolved the instant coffee in a little hot water before adding it to the blender. I also made my own peanut butter, but that was above and beyond the call of duty! With your minimal prepping done, remove the totally frozen bananas, add them to your blender along with your favorite ingredients and crank that sucker!

Nice Cream - 4 nice 'n' easy flavors

Prep Time: 10 mins
Resting time: 6-8 hours


  • 10 oz (285 g) – organic bananas, cut into chunks and frozen for 8 hours/overnight
  • 2 oz (60 g) – deshelled pistachios, ground into a fine powder
  • 1/4 tsp (1.25 ml) – almond essence
  • Chocolate coffee
  • 10 oz (285 g) – bananas, cut into chunks and frozen for 8 hours/overnight
  • 1-2 Tbsps (15-30 ml) – raw cacao powder
  • 1 Tbsp (15 ml) – instant coffee dissolved in 1 Tbsp (15 ml) – water
  • Raspberry vanilla
  • 10 oz (285 g) – bananas, cut into chunks and frozen for 8 hours/overnight
  • 4½ oz (125 g) –raspberries (I used fresh but frozen is fine, too)
  • ½ tsp (2.5 ml) – vanilla essence
  • Peanut butter
  • 10 oz (285 g) – bananas, cut into chunks and frozen for 8 hours/overnight
  • 2+2 Tbsps (30+30 ml) – peanut butter, mix 2 Tbsps with the bananas in blender, and then 2 Tbsps by hand after for a marble effect
  • Optional: Caramel sauce
  • 8 fl oz (220 ml) – coconut cream
  • 3 Tbsps (45 ml) – coconut sugar


Nice cream
  1. For all 4 flavors: prepare the ingredients as mentioned above, then place all ingredients in a blender and mix to the desired consistency – semi smooth with maybe a few chunks here and there.
  2. Serve and eat immediately with optional toppings/sauce or refreeze.
Caramel sauce
  1. Bring coconut cream to a boil, lower temperature and simmer for an hour (I know, but it’s worth it!
  2. Add coconut sugar one tablespoon at a time and whisk into the cream. The sauce should now be fairly think and will thicken more upon cooling.
  3. When the sugar is completely dissolved, remove the pan from heat and allow to cool.
  4. Pour over your favorite nice cream!
